As the seasons change and the air becomes crisp, there’s nothing more comforting than a steaming bowl of soup. Tsukune – chicken meatballs grilled over charcoal – are a staple of Japanese yakitori restaurants. Here, they come together in a twist on classic Ashkenazi (Eastern European Jewish) matzo ball soup. The tsukune, held together with matzo meal, add enough heft to bump this beloved appetizer to an entrée spotlight role.
