Building The Jewish& Cookbook – Capunti with Matthew Calverley
Capunti is a type of pasta that resembles a pea pod, from the Puglia region of Italy. This pasta does not require much in the way of tools, instead putting the importance on fresh ingredients and time, and serves as a great introduction for anyone looking to learn pasta-making at home. We will be serving our capunti with a traditional sugo or tomato sauce, perfect for winter, when a warm nourishing meal can really cut through the cold and dark days.
About Matthew: Professionally, Mat Calverley (he/him) is a practitioner of customer-centered design at Scotiabank. When not leading design thinking workshops, you can usually find Mat in the kitchen, or the woodshop. In 2017 he began the conversion process to Judaism and is now a proud Dov (bear). He brings his curiosity about Judaism to the kitchen, where he enjoys combining traditional Jewish recipes with his Italian background. In 2019, he cooked a menu of Italian-Ashkenazi dishes at the event “Bubbe vs Nona” at the Depanneur, and is looking forward to more charitable cooking opportunities. His other passion is hot sauce and, using locally sourced peppers, he hopes to bring a spicy kick to your food with Kuma Fermenations (launching whenever this pandemic is over).
